Our Cultivated Olive Varieties

Egypt’s olive harvesting season begins every August. At Al Fayrouz Farms, every crop lot is carefully monitored, hand-selected, and graded at peak maturity during the planting and harvesting cycles to guarantee premium caliber consistency across all wholesale distributions.

Picual (Green)

  • • Fruit Size: 3–7 grams
  • • Seed Ratio: 12% of the fruit
  • • Oil Content: 18–22% of the fruit

Manzanilla (Green)

  • • Fruit Size: 4–7 grams
  • • Seed Ratio: 10–12% of the fruit
  • • Oil Content: 16–20% of the fruit

Aguizy (Green)

  • • Fruit Size: 9–11 grams
  • • Seed Ratio: 10–15% of the fruit
  • • Oil Content: Lower natural oil yield

Picual (Black)

  • • Fruit Size: 3–7 grams

Our Pickled Olives

Using traditional farm curing and brining methods, we turn our fresh harvests into high-quality, crisp pickled olives. They are carefully prepared and preserved right on our estate to deliver a rich, authentic flavor that is perfect for international food service and retail markets.

Green Whole & Pitted Olives

Our green table olives are harvested precisely during the optimal ripening cycle—once the fruit reaches full size, the hue shifts to yellowish-green, and the flesh perfectly balances consistency.

Black Whole & Pitted Olives

Harvested close to full natural ripeness, these table olives are celebrated for their rich, slightly bitter aroma. The deep color is stabilized by exposing the fruits to natural air for 2–3 days during processing.

Sliced Green Olives

Using our premium green varieties, these olives are mechanically processed into uniform, high-precision slices designed for immediate commercial use. Processing: Automated mechanical slicing lines.

Our Olive Oil Varieties

Our olive oil is made from the Coratina variety, which is naturally stable and rich in nutrients, giving it a long shelf life of up to 24 months. We extract everything purely by mechanical cold-pressing—meaning no chemicals are ever used, only natural washing, filtering, and settling to keep the oil pure.

Extra Virgin Olive Oil

  • • Acidity: Less than 0.8%.
  • • Best For: Appetizers, salads, and premium retail bottling.

Ordinary Olive Oil

  • • Acidity: Less than 3.0%.
  • • Best For: Industrial food manufacturing and large-scale bulk processing.

Virgin Olive Oil

  • • Acidity: Less than 2.0%.
  • • Best For: Everyday commercial cooking and restaurant supply.

Lampante Olive Oil

  • • Acidity: Over 3.5%.
  • • Best For: Industrial refining and technical uses only (not for direct consumption).
